The Perfect Dinner Party Companion: Swirl, Sip & Savor

Usually, my dinner party planning goes something like this:

1. Invite people over for a dinner party weeks in advance
2. Think about what I’m going to make for weeks leading up to the dinner party

4. Attempt something entirely too complicated the day of a dinner party
5. Spend too much time in the kitchen while guests are enjoying themselves at my dinner party

Swirl, Sip & Savor is a great resource for a novice dinner entertainer or an experienced host/hostess. Not only does it cover party food basics like dips, finger foods, and small plates, but a different Northwest winery is featured in each recipe, along with complimentary wine from their collection.

My favourite part of the book is the “Wine Pairing by Varietal” appendix. It allows you to match any varietal with recipes from the book, which comes in handy when you’re working with wines that you already have on hand.
Additionally, the “Wine and Food Pairing Guide” appendix describes what types of foods pair best with different varietals. For example, I learned that Sangioveses work best with simple, rustic dishes while Syrahs are better suited to robust, hearty meals like stews and barbeque.

And with the exception of the crostinis and flatbreads, most, if not all, of the recipes in the book are easy to convert to gluten-free; a definite plus if you’re trying to please a group.

Here’s one of my favourite recipes from the book. Try it for your next dinner party:

Lamb Skewers with Yogurt Cucumber Dipping Sauce
Tapteil Vineyard Winery | Benton City, Washington

Makes 12 skewers

  • 1/4 cup lemon agrumato olive oil or extra virgin olive oil
  • Juice of 1 lemon (about 3 tablespoons)
  • 1 tablespoon minced garlic
  • 6 sprigs of fresh rosemary, leaves chopped
  • 15 to 20 fresh mint leaves, chopped
  • Salt and freshly ground black pepper
  • 1 1/2 pounds trimmed boneless leg of lamb, cut into 1-inch cubes
  • 12 rosemary branches (to use as skewers), if desired, or 12 bamboo skewers
  • Yogurt Cucumber Dipping Sauce (recipe follows)

Soak the rosemary branch skewers or bamboo skewers in water for 30 minutes before grilling.

Mix together the lemon agrumato olive oil, lemon juice, garlic, rosemary, mint, salt, and pepper in a resealable 1-gallon plastic bag. Shake well. Add the lamb cubes and shake to coat with the marinade. Marinate the lamb at room temperature while assembling the Yogurt Cucumber Dipping Sauce.

Preheat the grill to medium-high heat.

While the grill heats, place four to five marinated lamb cubes on each skewer. Grill the skewers, rotating them, until nicely brown but not overcooked, about 8 minutes for medium-rare. These will cook quickly, so watch them carefully.

Serve the skewers with the dipping sauce and warm pita bread, if desired.

  • Yogurt Cucumber Dipping Sauce
  • 1-pint Greek-style yoghurt
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons crushed garlic
  • 1 tablespoon finely chopped fresh mint
  • 1 tablespoon finely chopped fresh parsley
  • 1 cup diced English cucumber
  • Salt and freshly ground black pepper

In a medium serving bowl, mix together the yoghurt, lemon juice, garlic, mint, parsley, and cucumber. Season with salt and pepper to taste.

I wanted to write today about Julie & Julia. OK, not really about the movie nor about the book, Mushroom Ragù but about the discoveries that can be made within a wave of interest like the one that’s lifted Julie & Julia and the related books to the bestseller lists.

How cool is it to see Julia Child and her accomplishments so celebrated that Meryl Streep plays her in a top-flight Hollywood movie and people are racing to bookstores to pick up her classic tome Mastering the Art of French Cooking? (Also, don’t miss Julia’s fabulous memoir, My Life in France, on which much of the movie is based. Both of these books I devoured over the course of a great vacation some years ago.)

Here at Sasquatch, we have just one or two degrees of separation from the amazing Miss Julia via a terrific cookbook we published last fall, Cooking Mushroom Ragù with Les Dames d’Escoffier: At Home with the Women Who Shape the Way, We Eat and Drink edited by Marcella Rosene with Pat Mozersky.

Featuring an unpublished recipe from Julia Child, Cooking with Les Dames d’Escoffier is a treasure trove of 125 recipes, kitchen wisdom. And culinary talent from the many talented women inspired by Julia Child to make cooking their life’s work.

In the early ’70s, the irrepressible Carol Brock, then Sunday food editor at The New York Daily News spearheaded the formation of Les Dames d’Escoffier. The feminine counterpart to Les Amis d’Escoffier, an all-male organization of eminent chefs.

Today Les Dames d’Escoffier boasts 26 chapters across the U.S. and Canada, and includes such legendary names like Alice Waters, Dorie Greenspan, Marcella Hazan, Lidia Bastianich, and many of today’s newest culinary stars.

This is one of my favorite cookbooks because reading it really is like having your kitchen full of these legendary cooks. Sipping a little wine with you as you prepare another beautiful home-cooked meal.

Mushroom Ragù for Noodles

This is not your typical pasta dish. Rather, it is an aromatic combination of minced vegetables and mushrooms simmered in just a bit of olive oil and cream, then spooned over buttered noodles.

Simple to prepare yet highly flavorful, the dish is typical of those that have made its author, Alice Waters, a culinary icon of our times.

Prepare Ahead: The ragù can be made 1 or 2 days ahead, then briefly reheated to top the freshly cooked noodles.

  • 1 tablespoon olive oil plus additional for sautéing
  • 1/2 large onion, peeled and finely diced (about 1 cup)
  • 1 carrot, peeled and finely diced (about 1/2 cup)
  • 1 stalk celery, finely diced (about 2/3 cup)
  • 1/2 teaspoon salt
  • 3 sprigs thyme, leaves picked from stems
  • 3 sprigs parsley, leaves only, chopped
  • 1 small bay leaf
  • 1/4 cup fresh tomato, finely diced
  • 1 pound fresh mushrooms (choose a mixture of two or three types: chanterelles, black trumpets, hedgehogs, cultivated brown or white)
  • 2 tablespoons unsalted butter, at room temperature, plus additional for sautéing
  • 1/4 cup heavy cream or crème fraîche
  • 1/2 cup water or chicken broth (if not vegetarian)
  • 8 ounces wide egg noodles (the first choice is homemade fresh pappardelle, the classic accompaniment to such a ragù)
  • 1/4 to 1/3 cup freshly grated Parmigiano-Reggiano cheese
  • Freshly chopped parsley

Heat the oil in a large, heavy skillet over medium heat. Add the onion, carrot, celery, and salt. Cook until very tender, but regulate heat to allow little or no browning. Add the thyme, parsley, and bay leaf. Cook for 1 minute and add tomatoes. Cook for another 5 minutes. Remove from the heat and reserve.

Carefully clean and slice the mushrooms, keeping each type separate. If they are very dirty, Mushroom Ragù it will be necessary to wash them (crunching down on dirt and sand is very unpleasant).

The mushrooms may take on some water, but it will be thrown off shortly after they hit the hot pan. Heat enough olive oil and butter to lightly coat a small skillet large enough to hold each batch of mushrooms. Sauté each type of mushroom separately.

As they cook, the mushrooms will give off liquid; let the juices boil away or tip off the juices and set them aside (the reserved juices can be added back to the Mushroom Ragù sauce later in place of some of the water or broth). Continue cooking the mushrooms until tender and lightly browned (you may need to add a little more oil or butter).

Turn each batch of cooked mushrooms onto a cutting board, chop to the size of the cooked vegetables, and combine with the reserved vegetables and herbs in the larger skillet. Repeat this process for all the mushrooms. Then add the cream and water (here you can substitute reserved mushroom juices for any part of the liquid).

Bring to a simmer and cook for 15 minutes. Taste for salt and add as needed. Moisten with more liquid if desired, though the ragù is not intended to be soupy. Remove from the heat and reserve.

When ready to serve, bring a large pot of salted water to a boil. Add the noodles and cook Mushroom Ragù until barely tender. While the noodles cook, gently reheat the ragù.

When the noodles are done cooking, drain, reserving about 1 cup of the cooking water. Return the Mushroom Ragù noodles to the pot and toss with the butter and cheese and enough of the cooking water to keep the noodles separate and well-coated.

Spoon the noodles onto a warm serving platter or 4 individual plates. Top generously with the ragù and a sprinkle of parsley Mushroom Ragù. Serve immediately.

Researchers from the University of Sydney and Cambridge university recruit 22 volunteers between 18-51 years old with normal body weight, then ask them to stay and eat in places that have been provided by the researchers.

The volunteers were given food with different protein levels but with almost the same appearance. For breakfast they were given a tasty muffin, for lunch they were given the grilled tuna with salad and spaghetti bolognaise with vegetables or pastel with beef and dessert for dinner.

Snacking Habits

Given the number of carbohydrates are at levels 45, 50, or 60 percent of total food but the amount of fat in foods is set to remain at around 30 percent of food consumed.

All the volunteers doing the same exercise, walking for one hour with the supervision and conduct the same activities that the volunteers did not eat because of stress or boredom.

People who consume 10 percent protein ate 280 more outside meals compared with the group that ate 15% protein. On average they ate 1038 calories of which 70 percent comes from snacks.

The adults in the UK eat on average about 12 percent of protein every day. This number has decreased since the replacement of protein with fast food and processed foods that contain lots of carbohydrates and sweeteners.

Alison Crosby, researchers from the University of Sydney said that the results of this study indicate that humans have a high demand and have a strong appetite in the protein. Therefore, when levels of the protein consumed in the diet are low, there can be encouraged to consume more food. ”

To reduce snacking habits and lose weight nutrition experts recommend eating ¼ servings of food are proteins, carbohydrates ¼, and half a serving of food is a vegetable.

Eating large amounts of carbohydrates, sugars and fats  for example when you are taking soft drinks can trigger snacking habits and accumulation of carbohydrates in into body fat. 

But it is not advisable to eliminate carbs altogether or eat protein in large quantities. Said Dr. Susan Jebb, head of Human Nutrition Research Unit in Cambridge as well as a research associate.

15% of protein intake is sufficient to reduce the habit of snacking, and maintain ideal weight. At least this study reminds us to pay more attention to portion and nutritional value of foods we consume.

Cleanse your face with a cleansing milk or mild face wash and gently apply the mixture paste onto your neck and face, and do a gently message. Wear the mask until dry or at least 20 minutes. Rinse off with warm water.

Ingredients: 1 oz of Orange Juice, 2 oz of Ripe Avocado, 1 tsp of Molasses Chamomile Essential Oil Drops, 1 tsp of Pure Acacia Honey

Who’s in the mood for a sweet treat, Chocolate Fudge Bombs, but doesn’t want to lose their wonderful low-carb environment in the body?

If you’re saying ME, ME, ME, THIS is the recipe that you need to make over and over again!

I originally created this recipe when I was doing a heavy round of Ketosis to decrease the inflammation in my back (I have a severe case of scoliosis if you didn’t know). I wanted something delicious but really wanted to keep my carbs low.

So .  . . Chocolate Fudge Bombs came to be!

Please Note: when I create recipes, I do not use anything except looking at the ingredients I have on hand, thinking about the macronutrient balance, and then get creative in hoping it turns out! The initial recipe I made did not have honey (which decreased the carb content further), but let’s be honest: it’s not as yummy without the honey.

Should you add the honey or not? It’s up to you! Consider how “intense” you’re pushing for your goals, and consider what sugar will do in raising blood sugar–even if by a little.

Additional Notes: Chocolate Fudge Bombs

  1. Don’t leave the fudge out for too long or it will soften too much. Ideal serving time is between 10-20 minutes after removing from the freezer.
  2. Pair this with raw veggies and a yogurt-based Ranch dip (like Bolthouse) and a protein (like shredded chicken) to round out a PVF meal. Orrrrrrr. . . . just eat by itself as a bedtime snack. “F” on its own is just fine if you are not terribly hungry.

Chocolate Fudge Bombs

Ingredients:

  • 4 Tbsp. organic coconut oil
  • 4 Tbsp. dark baking cocoa
  • ¾ c. unsweetened almond meal (flour)
  • 2/3 c. 100% natural peanut butter
  • ¼ c. unsweetened almond milk
  • 2 Tbsp. raw honey (optional)
  • 1 tsp. cinnamon

Directions:

  1. In a microwavable bowl, place the coconut oil and heat (if needed) until liquid.
  2. Mix the dark baking cocoa into the coconut oil.
  3. Mix in the almond meal into the coconut oil and cocoa mixture.  Add it ¼ c. at a time. The batter should be the same consistency as brownie batter.
  4. In a separate bowl, mix the peanut butter with the unsweetened almond milk and cinnamon.
  5. Add the fudge mixture to the peanut butter mixture and mix well.
  6. Spread the batter in the bottom of a square baking dish after spraying with olive oil or coconut oil-based cooking spray.
  7. Drizzle honey across the top for a little added sweetness.
  8. Cover with tin foil and freeze for 20 minutes before serving.
  9. Cut into 4 rows by 4 rows for 16 pieces of Fudge before serving.

  • Protein: 3 g
  • Carbs: 6 g
  • Fats: 12 g
  • Calories: 158
  • Serving Size: 1 square

If you have purchased the Power Foods Lifestyle Recipe Book and wondered about how to adapt the macros and portion sizes, this blog post is for you.

At the beginning of each volume of recipes, there is a full-page that describes how portion sizes work. Note the words “guidelines” in the first paragraph. These are not, nor can they be absolutes.

The complexities of such nuanced information such as caloric expenditure, Basal Metabolic Rate (BMR), energy levels, insulin resistance, digestive capacity, and hormone fluctuation renders it a nearly impossible task to give everyone that ever reads my books exact numbers.

With that said, I do my best to give you a starting point. If you are serious about accelerating your goals, decreasing you’re overwhelmed, and just being told what to do, I encourage you to utilize my discounted Introductory Coaching Call.

Let’s now talk through other variables to consider as you are working to build your personalized Power Foods Recipe Book Lifestyle Strategy:

  1. Read the book, The Power Foods Lifestyle, so you understand the methodology between pairing Proteins, Veggies, Carbs, and Fats in PVC, PVF, or PVCF meals. You can do a crash course on the book in this podcast episode.
  2. Every peak range is based on the assumption you will be doing 6 small meals per day of any combination of PVC or PVF meals. The PFL base methodology in peak ranges is built for a semi-active female with mild insulin resistance who is looking to lose 10-15 pounds of body fat. For all other strategies, symptoms, etc., adaptations and tweaks will need to be made.
  3. Remember that here at the Power Foods Lifestyle, there is no absolute strategy. I have over 50 models of PFL strategies that I use with clients in private settings. This includes models like Ketosis, Carb Cycling, Intermittent Fasting, etc. But without that hands-on experience with you, you must do your best to listen, observe, and discern the best approaches for you. If you are ever stuck in all-or-nothing thinking or that you just can’t do it, I highly recommend we get on a call. What’s the Base Peak Range? Protein: 15-30 grams Protein per meal (daily total should be no fewer or greater than 90-160 g per day)

    Carbohydrates:20-30 grams Carbs per carb meal you choose to eat. If you do not know when to eat carbs, click here to view this explanation. These should be as few as you can reduce to. Fats: 8-12 grams of total Fats per fats meal you choose to eat.  You should never eat fewer than 30 grams of fat without exception. The result will be hair loss, brittle nails, and hormonal imbalances. 

Q. Many of the Recipes fall outside the peak ranges recommended. How am I supposed to adapt?

A. Peak Ranges are built on individual food contributors, not the recipe total. Look at each food and the portion size. Ensure the total amount fits a peak range for your strategy. This will make it easier for you to construct your own meals as well as you get more comfortable with Power Food combining to construct your meals.

Q. Do my Veggies’ carbs contribute to the overall Carbohydrates in the meal?

A. Yes and no; it depends on the Tier you’re living and your goal you’re trying to reach.

When they count:

  • You are in Tier 3 and we are working to accelerate into body composition shifts, please count your veggie carbs. You should be tracking macros in MyFitnessPal as I describe in this video.
  • No, we do not count Net Fiber here at the Power Foods Lifestyle. Count total carbohydrates only.

When they don’t count: 

  • You are living a Tier 1 (just starting to choose healthier foods and limit sugars) or Tier 2 (working on combining PVC and PVF meals without exactness in peak ranges and ratios).
  • If we are working on disconnecting emotionally from obsessive eating or eating disorders, simply follow the principle of combining 1-2 cups of veggies with each PF or PC meal you eat. If you eat a PVC meal, only look at the total carbohydrates in the ‘C’ Food you chose.

Q. If I’m in Tier 3 and I want to use the recipes, how can I adjust for the higher macros without tracking my macros?

A. You can manually adjust the portion sizes at your next meal. Reduce the food from those “overdone” macro groups in the next meal to make a “bridge” between two meals so the average between the two meals of Cs is 20-30 grams of carbs, or Ps average between two meals is 15-30 grams, etc.

Remember that 6 meals per day and these Peak Ranges are not the end-all be-all, especially once I get a person’s metabolism after the first 3-4 weeks. That’s when we can re-strategize and factor in total meals per day that works for them, including where their emotions, psychology, and day-to-day lifestyle needs are.
